Ok since some of you girls wanted me to post some recepies…Here is a one you should try, How to make healthy chicken quesadillas. First thing you need to know is they are crazy easy to make. They are healthy ;) . They are cheap, and you can impress all your friends. :)

Here is the list:

2 portions chicken breast (1/2 lb)

1 cup salsa – If you live close to a Trader Joe’s get some of their mango salsa. If you don’t live next to a Trader Joe’s….move!

4 4-inch corn tortillas

1/4 cup reduced-fat shredded Havarti cheese

1/4 cup fat free sour cream

How to make healthy chicken quesadillas

Directions:

  1. Lightly coat a medium skillet with cooking spray and place over medium heat. Slice chicken into 1/2 inch cubes. Sauté chicken with salsa until chicken is no longer pink (about 12′ish minutes).
  2. Lightly coat a large skillet with cooking spray and place over medium heat. Place a tortilla in the skillet and spread half of the chicken mixture over the tortilla. Top with half of the cheese. Fold tortilla over the filling and cook until lightly browned, about 3 minutes. Turn and brown on the other side. Remove from skillet and set aside.
  3. Repeat with the remaining tortilla, chicken mixture, and Havarti.
  4. Cut quesadillas into wedges and place on small plates. Put half of the sour cream on each plate for dipping.
